Ingredients
- 2 package or 2 pound of rigatoni pasta or penne
- 2/3 cup extra virgin olive oil (so it covers the bottom of the pan)
- 2 Tbsp fresh finely minced garlic
- 1 cup tomato paste
- 2 cup heavy cream
- 1.5 tsp red pepper flakes
- 4 tsp dried basil (or oregano)
- 1 tsp Italian seasoning
- 1 tsp Spanish paprika
- 1.5 tsp brown sugar
- salt and pepper to taste
- 2/3 cup freshly grated parmesan
- 4 Tbsp unsalted butter
- pasta water
- garnish: finely chopped parsley, parmesan, red pepper flakes.
Instructions
- Bring a medium/large pot to boil. Add in pasta and cook according to package directions. Save 1 cup of pasta water when draining.
- Meanwhile, in large frying pan over heat, add olive oil, garlic, tomato paste and cook for 4 to 5 mins.
- Then add heavy cream and stir.
- Add in spices/seasonings.
- Add in grated parmesan, butter, pasta water. Mix until smooth and creamy.
- Add cooked pasta into large frying pan of sauce. Mix. Add garnish.
