Pumpkin Spice Bread

Ingredients

  • One 15oz can of 100% pure pumpkin
  • 3 tsp pumpkin spice (or equal parts cinnamon, nutmeg, 1/2 ground cloves)
  • 1.5 cups water
  • 3.5 cups dark brown sugar
  • 1 cup vegetable oil
  • 4 large eggs, lightly beaten

  • 3.5 cups all purpose flour
  • 2 tsp baking soda
  • 1.5 tsp salt

Instructions

  1. Lightly coat two baking pans (9x5x3 inches) with butter. Preheat oven to 360F or 180C.
  2. In large bowl, mix pumpkin and spices. Then add in and mix sequentially until smooth: water, brown sugar, oil and eggs.
  3. In separate bowl, mix flour, baking soda, salt. The fold into medium bowl ingredients and mix until just combined.
  4. Pour half of mixture into each greased baking pan and place in the oven for about 1 hour.
  5. After baking, let cool for about 20 minutes (cool to room temperature) before slicing.
