Ingredients
- One 15oz can of 100% pure pumpkin
- 3 tsp pumpkin spice (or equal parts cinnamon, nutmeg, 1/2 ground cloves)
- 1.5 cups water
- 3.5 cups dark brown sugar
- 1 cup vegetable oil
- 4 large eggs, lightly beaten
- 3.5 cups all purpose flour
- 2 tsp baking soda
- 1.5 tsp salt
Instructions
- Lightly coat two baking pans (9x5x3 inches) with butter. Preheat oven to 360F or 180C.
- In large bowl, mix pumpkin and spices. Then add in and mix sequentially until smooth: water, brown sugar, oil and eggs.
- In separate bowl, mix flour, baking soda, salt. The fold into medium bowl ingredients and mix until just combined.
- Pour half of mixture into each greased baking pan and place in the oven for about 1 hour.
- After baking, let cool for about 20 minutes (cool to room temperature) before slicing.
