Banana Bread (2 loaves)

Ingredients

  • 6 large ripe bananas
  • 1 cup vegetable oil
  • 2 cups brown sugar
  • 4 eggs

  • 4 cups all purpose flour
  • 2 tsp baking powder
  • 2 tsp baking soda
  • 1 tsp salt

  • 4 tsp vanilla extract
  • 1 cup chocolate chips

Instructions

  1. Lightly coat two baking pans (9x5x3 inches) with butter. Preheat oven to 360F or 180C.
  2. In a large bowl, mash bananas and then mix in oil, brown sugar and eggs.
  3. In a medium bowl, mix flour, baking powder, baking soda and salt.
  4. Add the dry ingredients (medium bowl) into the wet ingredients (large bowl) and fold together until just mixed.
  5. Add in vanilla extract and mix.
  6. Add in chocolate chips and raisins and mix.
  7. Pour half of the mixture into each baking pan and then place in the oven for 1 hour.
  8. After baking, let cool for 20 minutes before slicing.
