Quiche

Ingredients

  • 2 pie crusts
  • 3-4 medium zucchini sliced
  • 4-5 medium tomatoes sliced

  • 7 eggs lightly beaten
  • 1 pint (16 fluid oz) heavy whipping cream
  • 2 tsp herbes de provence
  • pepper to taste
  • 10 oz goat cheese

Instructions

  1. Place room temperature pie dough (let sit out of refrigerator for 5 mins) in pie pans. Preheat oven to 390F or 200C.
  2. Layer sliced zucchini and then sliced tomatoes.
  3. In medium bowl, lightly beat eggs and then gently mix in cream, herbes de provence and pepper.
  4. Pour contents over zucchini and tomatoes in pie pan.
  5. Layer on slices of goat cheese.
  6. Bake 1 hour.
